As you know the serial number, you will be able to find the approximate date of production from the Omega website at:

It is impossible to say which model of pie pan Constellation you have, without seeing a picture. Can you post one? I assume you have looked at the sales catalogues on Steve's website:

The oldest is 1956 and there are some mouth-watering pictures of pie pans!

As to values, any watch of that sort of vintage which is solid gold is going to be worth a good deal. They do come up on the internet auction sites from time to time and that may be a good way of assessing the value of your watch.
