It's a real watch that says Omega on it.

You don't, and it probably isn't. Skeletonizing watches is a horrendously expensive process that compromises accuracy and durability. Omega has only very rarely skeletonized a watch.

Someone else may have skeletonized an Omega movement. But if they gold plated a movement, why put it in a stainless steel case?

Omega can identify a watch by the case serial number and the movement serial number. Contact Omega on the website and see what they tell you.
