"A once over" is pretty vague. You need to select a specific level of service to ask for or you leave yourself at the mercy of whatever the jeweler wants to do. Do you want them to just check it to see if it needs anything? Or to go ahead and do a full cheaning and adjustment? Or what?

Once you decide, call several places and get their quote for that specific level of service.

It depends on which specific watch you have in the Constellation series. Even within a single year there can be dozens of specific models bearing the Constellation name. But generally the ones from 1956 in decent condition should be somewhere in the range of $250-500. Obviously, better condition and rarer model versions would be more.
