It's great to hear that the watch has been restored and that you are happy with the way the watch looks.
Now, for some amateur advice regarding winding and wearing.
I do not believe that there is an real risk of over-winding an automatic watch. Yes, you can keep winding it, even when it is fully wound, but the watch is designed to accommodate this. Imagine that you go for a long run or a brisk walk, and the automatic mechanism is "winding" the watch all the time . . . thus it is designed so that it cannot be over-wound.
My practice with the automatic watches is to give them a strong wind when I put on the watch for the first time -- probably something like 30 or 40 turns of the crown, even though I have never counted -- and then wind it again every few days, even though the watch is still running and probably well-wound, from the motion of my wrist.
In my experience, accuracy of the Caliber 12 movements should be within 30 seconds per day . . . and many of them will do much better than this. Losing 10 minutes per day would not be acceptable and evidences a problem that should be fixed. But before we declare that there is a problem, give it a strong winding, put it on your wrist, and let's see how it will perform.
