I doubt very much that the person that hit the Buy It Now button will actually get the watch.

I've had this happen a few times to me now, where I've Buy It Now'd a watch which was vastly undervalued, only for the seller to pull out of the deal, as 3rd parties will have offered more to them via eBay messages.
