Hi Duncan, IMHO this olive 510.501-backed watch sounds at least unlikely.
Could be the owner had it re-PVD'ed in olive after the first PVD layer wore off. On the other hand you can find quite a good deal of "polished" 510.501's, as if they were 510.500's: such jobs are not that uncommon.
Or, perhaps simpler, it may just be the case that the back of the case (pardon the pun) has been substituted with the 510.501.
