In general prices are quite high for vintage watches in Paris so you are unlikely to find a bargain. But there are several places with good selections:

L'Intemporel (Rolex only) - 4 rue de sevres, 6th arrondissement
Romain Rea - rue de bac, 6th arrondissement
time something - rue de bac, 6th arrondissement
Antoine de Macedo- rue madame, 6th arrondissement
Olivine - rue tocqueville, 17th arrondissement
Aronson - rue de mironmesnil, 8th arrondissement
MMC - rue saint honore, 1st arrondissement
Time Addict - rue saint honore, 1st arrondissement
