I've never really understood it. OK, it may stop people putting in cheeky low offers via email. Price on request always seems to be on expensive items, but one mans expensive is another mans cheap.
You see it a lot with house sales, you'll have POR for one property, but the listing next to it is clearly a more valuable property & it has the price listed!
Maybe there is a good reason that sellers use this approach?
